Cholesterol is not the bad guy (if interested look up "The great cholesterol lie" by Dr. Dwight Lundell), saturated fat is really not as bad as people think it is (if interested look up ("Good calories, bad calories" by Gary Taubes).
Like hidden dragon said, processed stuff is what kills you. It's true saturated fat elevates LDL, or low-density lipoprotein(known as "bad"), but it also raieses HDL, or high-density lipoprotein (the good kind of cholesterol). If you follow a low fat/low cholesterol diet you will have lower levels of cholesterol, BUT will have a higher percentage of LDL and small VLDL, or very low density lipoprotein (which is the worst kind). If you don't follow a low fat/low cholesterol diet you will still get some VLDL but they are a bigger, more puffy kind, which is better than the smaller type of VLDL (think of the smaller kind like sand, it will have a higher chance of clogging).
Eggs have good cholesterol (better when not oxidized) and nice biological value protein, so don't worry about it. Besides, who wants to take the time to separate egg whites and yolks? I sure don't... Charles Poliquin said something like "Egg whites are for dorks"... nature made it so there was a yolk in eggs, keep it that way.
Chicken's good too, I'm just annoyed with the saying that fat or cholesterol is to be avoided due to the cholesterol or saturated fat content (the eggs' saturated fat content is just 25%, the rest is mono and polyunsaturated fats, it's almost the same for things like red meats...)
