ROP is a good program for building muscle. I would highly recommend (if you aren't already doing so) to do the pullups alongside all of your pressing ladders and adding PTTP deadlifting on your variety days. Make sure that all of your lifts are progressing week to week.
I would say go with whole milk and at first just add a glass for each meal along with a recovery shake (whey or whatever) after your training.
If you are working this hard you want to just add enough calories and protein so that your weight slowly increases...say a pound or two a week.
That's how I'd do it.
