    Default Roasted Radishes - surprisingly good low carb side dish

    Tried this out the other night and it was so good that I wrote it up before even washing the dishes!

    ingredients:
    2 bunches radishes
    2 tbsp olive oil
    salt and pepper to taste

    directions:
    preheat oven to 400 degrees F. Scrub radishes well, then trim stems and any long scraggly roots. Cut in half if small, quarter them if larger. Toss with olive oil, salt and pepper then place in a single layer on a lightly oiled cookie sheet. Roast for 15-20 minutes, turning once sometime around the middle. Great side dish for steak or chicken!!!

    I do the same thing with Brussels Sprouts, except I'll use a coconut/olive oil blend or I'll use a Greek or Italian dressing I made with the same blend. Absolutely yummy. I'll buy some radishes on the way home to try with my bison tonite.
